Roasted Ginger and Garlic Butternut Squash Wedges

Ingredients

  • 2 lbs butternut squash peeled and cut into wedges
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp fresh ginger finely grated
  • 4 cloves garlic minced

Instructions

  1. Preheat oven to 350ºF.

  2. Combine minced garlic, olive oil, and ginger in a large bowl.

  3. Add squash and mix to coat well.

  4. Place squash on baking sheet and bake for 45 minutes or until tender.
